Braised Coppa Steaks
Around this time of year, even though it’s still blistering hot outside, I begin craving comfort food. There’s only so much light, summery food a person can take!
Our coppa steaks are an absolute delight to prepare and an easy way to make an every day meal special and elevated!
Coppa comes from the most premium part of the pork shoulder. Coppa steaks are individually portioned, beautifully marbled, and come in a 2-pack for your convenience. Give these delights a try this week! I really don’t think you’ll be disappointed.
Preparing Coppa Steaks the Butter Hill way:
Using a dutch oven or cast iron pan, heat butter or lard over medium high heat.
Season room temperature coppa steaks lightly with salt and pepper on each side and sear, just enough to achieve a golden brown finish on each side (roughly 2-3 minutes per side).
Remove steaks and deglaze the pan with a splash of high quality red wine or cooking broth.
Add roughly chopped carrots, onions, garlic, and celery to the pan, salting and cooking until slightly tender.
Top with 3 cups of red wine and/or broth, and nestle seared coppas in the cooking liquid and vegetables.
Simmer on LOW for 3 hours or until desired tenderness is reached. Check on liquid periodically and add water or broth as needed.
Serve with creamy mashed potatoes, a hearty bread, salad, or your favorite comfort sides.
